Chef

22.5 hrs per week
£7.88 per hr

Location: St Oswald's Village
Responsible to:
Head Chef

Overall Aim of the Job:-

  • To support the Head Chef to lead the catering staff in the Scheme/Village, in a way that is influential in the commitment to ExtraCare procedures, systems and approaches.
  • To provide an excellent World Class experience within the catering service offered within the Scheme / Village.
  • To contribute to the support offered to residents, working with the support team and the well being advisor, taking into account any specific individual nutritional needs that may be required by providing a meal service to cover main meal or all meals according to the current arrangements in the Village or Scheme.
  • To support the Care Team in the provision of other meals.
  • Actively pay attention to customer requirements and proactively deal with complaints and comments.
  • To promote quality control procedures including involving residents in menu planning.
  • To take full responsibility for the Restaurant and Catering function in the absence of the Head Chef.
Main Duties:-

Kitchen, Stores and Equipment

  • To maintain kitchen and food stores in a clean and tidy condition.
  • To be responsible for control of the stock of catering materials in the Scheme /Village.  To order supplies to maintain stock levels and receive and check all deliveries. Ensure recording of temperatures of chilled and frozen meals on arrival and transfer immediately to cold store.
  • With the Head Chef to periodically audit the condition of all cooking equipment and other catering hardware and organise repairs, request replacements as necessary.

Menus, Preparation and Presentation

  • To provide a World Class dining experience offering a choice of meals with good nutritional value as set out in SOP’s
  • To work closely with residents, support team and well being advisors concerning special diets which are to be rigorously followed.
  • To ensure a balanced diet is achieved for all Residents.
  • Work with the Head Chef to cost menus to ensure that meals are provided within the agreed budget.
  • Flexibly provides for additional catering requirements upon request.  
  • To record all menus and names of those who have eaten the meal, and to retain records for inspection.
  • To prepare a main meal daily for all residents, according to the agreement made in the Scheme / Village.
  • To support the Catering team ensuring that ExtraCare World Class ambitions for catering and hospitality are achieved in terms of meal preparation, production and service
Service of Main Meal

  • To lead the catering and hospitality team ensuring that tables are set and the main meal is presented in an appealing way, and to ensure that the meal/s are served to the residents at the correct  temperature, immediately they are delivered to the Restaurant.
  • To inform Care Staff if any delay is anticipated in the delivery time of the main meal to the Restaurant.
  • To organise the team to clear away fully after the main meal/other meals.
  • To prepare additional food items to supplement the cook chill/cook freeze diets and special items, e.g. birthday cakes, as requested.

Health and Safety

  • To work closely with the Scheme/Village Manager and Head Chef maintaining and reviewing services regularly.
  • Help maintain a clean and well kept environment.
  • Ensure all environmental health regulations covering food handling, preparation, presentation and storage are complied with as well as all standards set out by ExtraCare in addition to mandatory regulations.
  • All statutory training to be up to date with records of certificates.
  • To record all temperature controls as specified in the quality audit
  • Completion of risk assessments and to be alert to hazards for self, other staff and residents, which should be reported.
  • To assist complete World Class audits each season and ensure copies are available for inspection.
  • Quality EHO reports should be evident with no outstanding actions.
  • Any sightings of pests should be reported immediately to the Manager and Head Chef.

Training & Organisation Of Team

  • To take part in training on all parts of the job description and any other training which may be requested from time to time.
  • To contribute to the training of Catering or hospitality Assistants as required.
  • To complete all statutory and mandatory training as laid down by ExtraCare, and to ensure team attendance.
  • To assist the Head Chef in setting of seasonal goals and completion of Development Reviews for all team.
  • In conjunction with the Head Chef, arrange equitable rotas for Catering and Hospitality Staff, ensuring adequate holiday or sickness cover
  • Actively take part in continuous improvement

Resident Welfare and Support

  • To build and maintain good relationships with residents and their relatives, while adhering strictly to the requirement for confidentiality.

Laundry

  • To ensure that all overalls, tea towels and kitchen cloths are kept laundered and clean, using the Schemes laundry service.

Other Duties

  • To undertake any other duties which may be required from time to time.
  • This post is subject to satisfactory medical clearance, CRB/ISA disclosure, two written satisfactory references and Home Office right to work clearance.
